My cooking philosophy is very simple...

My mother, with whom I credit my life, passion, and love for cooking, taught me both how to cook and how to enjoy it. Mom prepared every morsel of food our family ate - from fresh bread every week, to soups and elixirs when we were sick. Fast food...What?! We hardly ever ate fast food, and, to this day, I still don’t enjoy store bought bread. Plus, Mom sang while she prepared meals. I asked her once why she did that and she said singing made her happy. For me, cooking is a personal way to express my love to the people in my life. Am I culinary educated? No, I'm Mom educated. Mom passed down to me her passion, skills, style, and techniques of how she showed love in the kitchen to her family. She gave me everything I needed and more. Am I a chef? Some may say yes, but I say, no. I just love being in the kitchen, which to me is the heart and soul of any home. So, in "Alethea’s Kitchen”, where everything is made with love, I'm just 'stirring up LOVE.

Appetizers

Sauteed Shrimp
Black tiger shrimp sauteed to perfection with Alethea’s special herbs and spices. Served with garlic bread

Guyanese Beef Patties
Flaky crust and juicy ground beef patties

Fried Shrimp
Fried Shrimp seasoned with herbs, salt and pepper. Served with Guava Sauce for dipping.

Truffle Fries
Thin cut deep-fried potatoes topped with Alethea’s truffle mixture. A tase above the rest. 

Entrees

Oxtail Stew
Hearty, savory beef oxtail braised with butter beans, onions, carrots, herbs and beef stock, slow cooked in a rich infused gravy.  Pair with the creamy mashed potatoes or white rice or rice & peas.

Chicken a’ la Alethea 
Where Chicken Meets Awesomeness!
Sautéed chicken with mushrooms, hot and sweet peppers, garlic and heavy cream simmered to perfection. Served over rice or pasta.

Braised Beef Short Ribs
Slow cooked beef ribs in beef broth, red wine, salt, pepper, herbs and spices bringing flavorful moments to life. Pair with our creamy mashed potatoes and homemade bread to soak up the sauce.

Oven Roasted Chicken & Potatoes
Whole chicken seasoned with Alethea’s special herbs and spices, seasoning salt, pepper, onions, pepper and potatoes. Served with white or brown rice or pasta.

Grilled Salmon
Grilled salmon lightly seasoned with salt and pepper.

Curry Chicken
Simmering chicken with spices, herbs, onions, carrots, potatoes and tomatoes. Served with white or brown rice. Or pair with Roti for a Guyanese all-time favorite. Discover Flavor Power!

Cooking with love provides food for the soul, and the secret ingredient is always “Love”. 

Originally from Guyana, South America, my family immigrated to the States when I was 6-years old after spending 2 years in St. Thomas, VI. I grew up eating authentic Guyanese food (Roti and Curry being my all-time favorite). Guyanese food is a mixture of Indian, Caribbean, African, Chinese and English foods, but it is hard to find. In an effort to bring the Guyanese cuisine to my community Alethea’s Kitchen is blazing the trail.
